Husband and wife Elton and Randee Hyndman took over this establishment in April 2009, from NINO GIACALONE, who remains a good friend to the restaurant. 

Since then there have been menu changes, a redecorating of the dining room, (with the help of our friends!) and a brand new kitchen and walk-in cooler.

Randee and Elton have successfully merged their love of Italian food, their passion for fresh, local ingredients and made-from-scratch recipes with Nino's.

Elton Hyndman​  - HEAD CHEF


Born in the Niagara region in Southern Ontario, Canada, Chef Elton started out washing dishes at the age of 11.  Eventually making it on the line, he cooked his way through high school and college to help pay the bills.  After graduating from culinary school, he spent the next few years traveling throughout the United States, Australia and Southeast Asia cooking and learning everywhere he went. Long stints in Albuquerque, Santa Fe, and Seattle all had a tremendous influence over his style and passion.


Shortly after landing in Baton Rouge, Chef Elton and his wife Randee purchased Nino’s, a small and cozy fine dining Italian restaurant that has since developed a very loyal following.
